Healthy, No Bake Energy Bites

My little Abby loves to snack!  She grazes all day long and is constantly requesting something to eat.  I try to have healthy snacks on hand that are easy for her to grab like grapes, pre-cut celery & carrots, get the idea.  Sometimes, I like to surprise her with what she calls "her treats."

These Healthy, No Bake Energy Bites are fun to make and we love them!  Here's my go to recipe when we need something fast and healthy for snack time.

  • 1 cup dry, old fashioned, quick cooking oats
  • 2/3 cup coconut (we use very fine shaved, unsweetened coconut)
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup wheat bran or wheat germ (we used wheat bran)
  • 1/4 cup ground flaxseed
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1 tsp. vanilla extract

Start by adding all the dry ingredients in a medium sized bowl, followed by the wet ingredients.

Mix until well combined.

Next, I take a small ice cream scoop and scoop little rounded mounds into an airtight container.  Refrigerate for 20 to 30 minutes.  Once you remove them from the refrigerator, you can roll into balls or enjoy as the are.

These delicious little bites are packed with flavor, fiber and nutrients.  It's a win win!

I am a mommy and I am also a grazer... it's ok when you are little like your daughter but not when you are 30! lol Maybe these would cure that sweet tooth I have and I wouldn't have to feel so bad about munching!     1. My daughter calls our flax/wheat mixture her ladybug sprinkles. She requests them on everything! :-)

    1. Thanks, Katie! Yes, I store them in the refrigerator because they keep better than way, but also I like them firm. My daughter on the other hand likes them softer, so I leave them on the counter for a few minutes and they soften just enough for her to enjoy. Hope that helps!
