Cherry Delight

For Father's Day, we surprised my husband with one of his favorite desserts, Cherry Delight.  It's a variation of Cherry Cheesecake that requires no baking and is very simple to make.

For the crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup powdered sugar
  • 6 T. melted butter
For the cream cheese mixture:
  • 1 package cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 tsp. vanilla extract
  • 1/2 container whipped topping, thawed (Cool Whip)
  • Cherry Pie Filling

Since Abby wanted to help with Daddy's dessert, she finely crushed the graham crackers in a large plastic bag.  You could also use pre-packaged graham cracker crumbs or crush in food processor.

Next, combine graham cracker crumbs, powdered sugar and melted butter.  Mix until moistened and press down in 9 x 9 baking dish.


Next, cream together cream cheese and powdered sugar.  Add vanilla extract.  Fold in whipped topping and spread mixture over graham cracker crust.


Top with pie filling and refrigerate until firm, about 1 hour. 

This dessert is cool and refreshing, with a subtle cream cheese flavor.  It's a great last minute dessert idea and is versatile, in that you can use almost any flavor pie filling you desire.

  3. Yummy! I love anything with cherry pie filling. I have had something like this before, except the person took the easy way out with the bottom part. Lol. She used pre-made tart shells! :)
